The Holiday Cocktail – A Recipe

We present a home-style interpretation of a beverage featured on a new drinks list. Designed as a large-volume prepared mix which is loaded with tastes of the festive period, which makes it ideal for a holiday party. Save the extra citrus syrup you can use for breakfast cocktails, sweets, or for additional servings of this cocktail.

The Bikini Cocktail

Serves 10 servings

For the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Drink (yields 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

For the Cordial: Put all the components inside a saucepan, heat until it reaches a light boil, mixing to dissolve. Then, remove from the stove allowing it to reach room temperature entirely. Pour into an sterilised bottle, seal and store in the refrigerator, it will last for around a month.

Preparing the Cocktail Base: Pour the specified liquid ingredients in a big jug, leave to sit for one hour, then filter it best through muslin, so it's fully clarified.

To serve: Measure 85ml from the premix into a cocktail shaker packed with ice, and stir lightly for a minute to chill. Filter to a chilled martini glass or a similar vessel, decorate with the cranberries and complete it using a light spray of mandarin oil above the glass.
